Spring onion Stir fry|Spring onion egg poriyal recipe

Hi friends, today I would like to share a simple but healthy spring onion poriyal. This is the first time I bought this from market. In Chennai, now is the season so we are getting very fresh spring onions.

So I bought it to try out few recipes with it. Both the green part and the bottom part can be used for cooking. So don’t discard any part. Let me share some health benefits of spring onions.

  • Spring onions are rich in vitamin C and calcium.
  • They are rich in folate and minerals.
  • And they are a very good source of dietary fibre.

Spring Onion Egg Poriyal

Ingredients

  • 2 cups Loosely packed Spring Onions
  • 1 medium Onion
  • 1 spoon Garlic paste
  • 1/2 spoon Chilli powder
  • 1 spoon Lentils powder/Parupu podi
  • 1 Egg
  • Salt to taste

To temper,

  • 2 spoon Oil
  • 1/2 spoon Cumin seeds
  • 1 spoon Urad dal
  • 1 spoon Chana dal

Instructions 

  • Take and wash the Spring onions.
  • Chop them.
  • Do the tempering.
  • Add onions.
  • Saute till brown.
  • Add spring onions.
  • Add garlic paste and cook in low flame.
  • Add chilli powder and salt.
  • Once the spring onions are cooked and soft add the lentils powder.
  • Finally crack an egg.
  • Mix thoroughly.
  • Cook till all the moisture is absorbed.
  • Serve for any rice or for chapathi as sabji.

Notes

  • Adding egg is purely optional, can skip egg and follow same procedure.

  • You can add grated coconut too.
  • No need to add water for cooking spring onions.
  • Instead of lentils powder , you can powder fried gram/pottukadalai and add it to curry.
