Today’s recipe is almost everyone favorite street food of Chennai. That is called Kaalan which is the mushroom. This recipe is found in almost every street side shops. And they are so yummy to have in the evening time as snack.

This recipe is quite a long process one. But you may make some pre preparations ahead and make them quite easier. In this recipe, they use cabbage as main ingredients along with mushrooms. These two are made to batter and deep fried like pakoras. These pakoras are then dropped into a gravy base.

Ingredients

  • 1 cup Mushrooms, chopped
  • 1 cup Cabbage, chopped
  • 1/2 cup Maida
  • 2 tbsp Rice flour
  • 1 tsp Kashmiri chilli powder
  • 1/4 tsp Garam masala powder
  • Salt required
  • Oil for frying

For gravy base,

  • 1 no. Onion, chopped
  • 1 tsp Ginger garlic paste
  • handful Curry leaves
  • 1 no. Tomato (grounded to paste)
  • 1/4 tsp Turmeric powder
  • 1/4 tsp garam masala powder
  • 1 tsp coriander powder
  • 1/2 tsp Chilli powder
  • Salt to taste
  • 2 tbsp Rice flour or Corn flour
  • 1 cup Water

Topping,

  • 1/2 cup Fried corn flakes

Instructions 

  • Take chopped mushrooms in a bowl.
  • Add chopped cabbage to it.
  • Add the spice powders.
  • Add maida.
  • Add the rice flour and salt.
  • Mix everything well without adding any water.
  • Heat oil in a pan, deep fry them by adding them in batches.
  • Fry till they are crisp.
  • Start preparing the gravy. Heat oil and saute the onions.
  • Add curry leaves and ginger garlic paste.
  • Add the tomato puree.
  • Add the spice powders and salt. Saute them till the raw smell leaves.
  • Make a slurry with rice flour and water.
  • Add this slurry to the mixture.
  • Once the gravy thickens, add the fried pakoras to it.
  • Cook them on low flame for 5 mins.
  • Serve hot with a cup of tea. Serve with chopped fresh onions.

Notes

  • Chop the mushrooms and cabbage so fine.
  • While making pakora batter, do not add any water since the water from vegetable is enough to make the batter.
  • Fry the pakoras till crisp.
  • Adding the rice flour slurry, makes the gravy to get thickness. 
  • You may also use corn flour to make the slurry.
  • You can top with fried corn flakes for crunchiness.
