Vendakkai saadham is a different yet simple rice recipe that can be prepared in no time. This recpe is somewhat different in taste but taste so good, that even lady’s finger haters would love to try it.

This rice can be siply had with papad, or egg curry or any spicy gravy of your choice. Lady’s finger is rich in fiber and many vitamins are present. So try to include this veggie atleast once a week in your diet.

Lady’s finger rice / Vendakkai Saadham

Ingredients

  • 1.5 cup Cooked rice
  • 10 no. Lady's finger / Vendakkai, chopped
  • 1 large Onion, cubed
  • Handful Curry leaves
  • 3 tbsp Grated Coconut
  • 2 tbsp Roasted gram dal / Pottukadalai
  • 1 spoon Red Chilli powder
  • 5 cloves Garlic
  • 1/4 spoon Turmeric powder

To temper,

  • 5 spoon Oil
  • 1 spoon Mustard seeds
  • 1/2 spoon Cumin seeds
  • 1 spoon Urad dal
  • 1 spoon Chana dal
  • 1 no. Dry red chilli

Instructions 

  • In a pan, add oil and saute the chopped lady's finger.
  • Once it is well cooked, add salt finally.
  • Remove it to a plate.
  • Do the tempering process.
  • Saute onions and curry leaves.
  • In a mixer, add coconut, garlic, pottukadalai and chilli powder and grind coarsely without adding any water.
  • Now add this paste to kadai and saute.
  • Add turmeric powder.
  • Add roasted lady's finger and saute till raw smell of masala leaves.
  • Finally add cooked rice and mix completely.

Notes

  • Prefer Gingelly oil for great taste.
  • Add garlic along with skin for flavor.
  • Use Kasmiri chilli powder for color.
