To temper,

Instructions
Do the tempering in a pan.
Saute onions till golden brown.
Add chilli and curry leaves.
Add chopped beetroot.
Add water.
Add salt and cook covered for 10 mins until beets is cooked well.
Finally add grated coconut.
Notes
You can either grate or chop the beetroot.
Adding coconut gives nice taste.
You can add red chilli too.
